Penicillium Album (White Mould)
Penicillium album - liquid ripening culture, surface mould, white during the growth, changes to light blue as the cheese matures. Used for lactic style cheeses such as Valençay, Selles sur Cher and Sainte-Maure de Touriane.
Refrigerator storage - up to 12 weeks. One dose for 500 litres of milk. Can be added directly to the the milk and also sprayed onto the cheese.
