Each sachet of MM100 25DCU inoculates up to 500 litres of fresh milk, depending on the cheese type. It is essentially for the manufacture of soft cheeses and is particularly suited to the production of Brie, Camembert, Feta as well as cream cheese, Crème Fraîche and Buttermilk. 

The use of starter rotation is crucial for the control of phages and it is advisable to alternate between types MM100 and MM101 when making cheese on a regular basis.

Hi,
I am using the Tomme recipe from your eBook which is simple and easy. I add various bits and pieces to make it more exiting; Poppy and Nigella seeds, Cranberry and Walnut, Chilli peppers with Cayenne pepper, all these make for a splendid variety.
